Discord is amazing, and it would also give us a platform for voice chat, if we so want. +1 for that.

I have a Discord account (for my home Mafia site) and it works fine for me. I must confess though, I honestly don't see why everyone raves over it. From my point of view, I much prefer mibbit as it offers some handy features that Discord (in my experience) doesn't. For instance, having sim'd on a couple of IRC Clients now, the ability to have each character type in different coloured fonts isn't just a 'nice to have', it's essential. I'm fairly certain that Discord doesn't have that functionality...

I gotta say, I like the idea of being able to use different colors, seems like it would make the sim so much easier to follow.

In my experience, once you have any more than about four players, keeping track of who said what starts to be something of a drama. Mibbit also has a really cool highlighting feature that you can use to identify everything that was said by a player of your choice. Show me THAT in Discord!

I've never used Mibbit or Discord and unfortunately despite my great age I have no idea how to setup an IRC server - should have paid more attention in my youth!
Definitely still up for and IRC type typey type game, remembering how rubbish some people's internet connections still are in this 21st century VoIP is still a dream although I would be gutted to miss out on STABeoke!!!
How about some board-based games too though, allows for game time if people can't make an IRC game. A lot are US based and being in the UK it sometimes makes things very late, something I can't do because I'm a terrible morning person at the best of times let alone without decent sleep.

Mibbit is essentially a browser-based IRC client that simplifies a lot of things, so it should be pretty familiar.

Even if we decide to use Mibbit, I would still create a Discord server for OOC. It's easy to use, easy to host and free. Plus there's voice chat support.
